I am really having a blast learning how to cook and bake and discovering all these wonderful foods without meats. Here is a quiche recipe that looks very nice and more elegant than just chopping things up and mixing them together. Love, Jane
Ingredients:
1 (9inch) unbaked pastry shell (ok i cheated, i haven't learned to make this from scratch)
1 1/2 cups chopped onions
1 medium green pepper
1 cup chopped tomato
1/2 cup chopped zucchini
1/2 cup sliced mushrooms
2 tablespoons butter
1/4 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
pinch of ground cinnamon
5 eggs
1/4 cup milk
1/4 cup grated parmesan
Line unpricked pastry shell with double thickness of heavy duty foil. Bake at 450 degrees F for 5 minutes. Remove foil. Bake 5 minutes more with reduced heat at 350 degrees F
In a skillet, saute the onion, green pepper, tomatoes, zucchine and mushrooms in butter. Add the curry powder, sat, pepper and cinnamon. Mix well. Spoon this into the crust.
In a bowl, beat the eggs, Add the milk and cheese and mix well. Carefully pour over the vegetables. Bake for 40-45 minutes or until knife inserted near the center comes out clean. Let stand for 5 minutes before cutting. Enjoy!
